I'm going to be going registering for third year poli sci courses soon. Other than fulfilling requirements, how do you choose courses? What is the goal of choosing a course? How do employers look at them? Does it make a difference or should I pick clusters of courses in the same poli discipline? How do I go about this?

That completely depends on what school you're going to.

General advice: pick courses whose content you want to learn, or that will get you to courses whose content you want to learn or need for the degree you want.

And employers don't look at your courses, lol.

My electives were either: a) prereqs for vet school that I needed, b) courses that I found interesting and wanted to take, or c) prereqs for other courses that I wanted to take. Employers don't care what courses you take.
