what type of careers can you get out of life or health sciences?

An undergraduate degree alone in Health or Life Sciences is essentially a pathway to further education, don't expect to get into high paying careers with a Life Sci or Health Sci degree straight out of school.

Your options include:
Professional School
Graduate School
College of Applied Arts & Technology

There are a lot of jobs out there that require a degree, any degree, but might not specifically pertain to the degree.
