One important thing to know about co-op is that you are not only limited to the jobs that match your program. If you are qualified for a chemistry or physics related job, you can get it. Likewise, if there's a psych major who has crazy programming experience, they can get a CS job.

How far ahead are we talking about here?

I'm pretty sure when you get to UW or sometime over the summer they have a "seminar" or something like that for the first years who want to go into the 14X courses, so whenever that is I guess.
