I was accepted into Queen's and I'm considering majoring in psychology, sociology or biology. I'm registered as a science student, although I may transfer into arts if I need to, depending on which major I choose. Would you consider these to be good courses for first year? What are they like? And should I take MATH 121 or MATH 122?

I took SOCY 122 and really enjoyed the course. There is a lot of theory in the first semester and looking at the founders of sociology as well as phiolosphers, and lots of Marx! Some students found the course a bit boring from what I heard...but I've discovered a bit of a Socy nerd so...:P Some extra info on the course- assuming you get professor Beamish which you probably will since I think he's been teaching the first year course for a while now, you should know that he wrote the text books that you are required to read for the course (well aside from the Encyclopedia...though he has a couple entries in there as well). This is good to know because basically everything he says in lecture are what he wrote in the book. So it is possible for you to pass the course by either just reading the textbooks or just attending lecture- though I did both since it helps reinforce the concepts. There are also study guides posted for the exams and optional review questions for each week for your readings posted online to help you study. Overall I'd say it's a good first year course :)
I didn't take PSYC 100 but most people I know hated that course. I think almost half the class either failed or were on the verge of failing the first exam and there were an insane amount of readings. I think they are trying to restructure the course so it's not quite as difficult so it might be better next year. The thing with PSYC 100 is that it is a really large course in terms of how many students take it so I think they try and weed out a lot of people. If the course is anything like it was this year I would recommend that you only take it if you are seriously considering majoring in the subject...it's not the most fun elective. It does focus a lot on the biology aspect of psych which was a reason a lot of the general arts students had a difficult time with it, but since you seem to be really interested in the sciences you might actually enjoy the course. I know one girl on my floor who enjoyed it so you never know!
